Trebbiano
Trebbiano (known as Ugni Blanc in France) originated in the Eastern Mediterranean and has been grown there since at least the 13th Century. It’s an important grape for so many reasons. Not only can it produce a dry white wine with high acidity, low sugar and crispness, but it is also used for aged Cognac, Armagnac, and brandy as well as a grape spirit for fortified wines. It is also blended with Grechetto to produce a wine called Orvieto in Tuscany, Italy. It can undergo botrytis rot to create a sweet dolce Orvieto. Typically, it has subtle lemon and flinty flavors, which is one of the reasons that it is so malleable.
