Xarel-lo
Xarel-lo is a bright yellow grape that is one of three grapes from Catalonia, Spain (the other two being Macabeo and Perellada) that are used in Spain’s Sparkling Cava production. It has higher acidity and more aromatic than its counterparts with flavors of lemon, peach, ginger and almond. It is produced in the traditional method for much less cost and more fruit flavors than champagne. It is aged for 5 months on lees. Although it lacks the prestige as it has only been produced since 1851.
