Pedro Ximenes
Pedro Ximenes (PX) is a molasses sweet Spanish wine . However, it is possible that it originated in the Canary Islands and travelled to Rheingau, Germany before ending up in its home of Montilla-Moriles. It is made into a variety of styles from Sparkling to fortified to sherry produced in the Solera System. The Solera System is a way of aging wine wherein there are levels from youngest (on top) and oldest on bottom. A portion of the wine stays in each barrel with vintages blended down into each barrel. This is done so each bottle has some wine of every vintage. This allows for youthful fruit tones from the young vintage to impart smooth vanilla tones of the mature vintage. It’s begins yellow to corral in color and is typically dried before being pressed. The flavor is unique with toffee and fig notes and the casks are often sent to Scotland and Ireland for malt whiskey aging.
