Palomino
Palomino (also known as Listan or Jerez) is primarily grown for the purposes of dry sherry production with low acidity and sugar. It is also found in Portugal, South Africa, Australia and California for the purposes of fortified wines. The color of the grapes is a golden hue with a hint of blush color. The Palomino grapes are very delicate and low malic acid which makes them oxidize easily. Once they ferment to 5% alcohol by volume, spirit is added to make the fermentation stop for the production of sherry, with the resulting wine approximately 15% alcohol by volume. As a dry white it is very neutral.
